Why pancakes, after all?
Perhaps because few things bring happiness quite so effortlessly.
The warm aroma from the kitchen. A smile with the first bite. A simple recipe shared with the people you love.

And isn’t that exactly what Easter is about?
Simple things that make us feel good.

So we thought: if we’re already talking about peace and joy, the pancake simply has to be part of it. And because indulgence at Wellnesshotel Gut Sonnberghof in Austria is just as essential as relaxation and nature experiences in the Hohe Tauern National Park, today we’re sharing our little Easter recipe with you.

Ingredients (for about 8-10 pancakes)

  • 250 g flour
  • 2–3 eggs

  • 500 ml milk

  • 1 pinch of salt

  • 1 tsp sugar (optional, for a sweet version)

  • 1 tbsp melted butter or oil

  • Butter or oil for frying


 

Preparation
1. Prepare the batter
Place the flour in a bowl. Add the eggs, milk, salt (and sugar if using).
Whisk with a whisk or mixer until you have a smooth batter.

2. Let the batter rest(optional, but recommended)
Let it rest for about 10–15 minutes – this helps the pancakes turn out more even and tender.

3. Cook the pancakes
Heat a pan and add a little butter or oil.
Pour in a ladle of batter and swirl the pan to spread it thinly.

Cook over medium heat until golden brown (about 1–2 minutes per side).
Flip once the edges start to lift slightly from the pan.


Whether you call them Eierkuchen, pancakes, Palatschinken, or even a simple omelet-style pancake – the most important thing is that they taste delicious. 😉
