Elderflower Season at Naturhotel Gut Sonnberghof

When the elderflower bushes surrounding Gut Sonnberghof burst into bloom, summer has truly arrived in the Austrian Alps. At Gut Sonnberghof, we love transforming nature’s seasonal treasures into homemade specialties – and our homemade elderflower syrup is one of our absolute favorites. Crafted from freshly picked elderflowers, it captures the delicate flavors and aromas of an Alpine summer in every sip.

Whether enjoyed as a classic Hugo, a refreshing non-alcoholic summer drink, or mixed with sparkling mineral water for a homemade elderflower soda, elderflower syrup captures the taste of an Austrian mountain summer in every glass. And that's exactly why we'd love to share our favorite recipe with you: 

 

 

Ingredients

  • 30–40 fresh elderflower heads
  • 1,100 ml water
  • 2 organic lemons
  • 1,100 g sugar
  • 15 g citric acid

Instructions

  1. Pick the elderflower heads on a dry, sunny day and gently shake them to remove any insects or debris.
  2. Slice the lemons into thin rounds.
  3. Place the water, elderflowers, lemon slices, and citric acid in a large container.
  4. Stir in the sugar until well dissolved.
  5. Cover and leave the mixture to infuse for 3–5 days in a cool place, stirring once a day.
  6. Strain the syrup through a fine cloth or sieve.
  7. Bring the syrup briefly to a boil, then pour it into sterilized bottles while still hot.
