Cashew Peanut Energy Bites with Organic Honey

Ingredients:

  • 100 g (3.5 oz) pitted dried dates

  • 60 g (2 oz) cashews

  • 30 g (1 oz) rolled oats (fine or quick oats)

  • 1 Tbsp peanut butter (about 25 g)

  • 1–2 tsp organic honey (about 10–15 g)

  • ¼ tsp salt (about 1.25 g)

Instructions:
1. Prep:
 Roughly chop the dates.
2. Mix: Place all ingredients in a blender or food processor. Blend until the mixture becomes smooth and slightly sticky. If it feels too dry, add a bit more honey or peanut butter.
3. Shape: With your hands, roll the mixture into balls about the size of a walnut.
4. Chill: Place the finished bites on parchment paper and refrigerate for at least 30 minutes until firm.

Tip:
For extra flavor and texture, roll the bites in shredded coconut, chopped nuts, or cocoa powder. Stored in the refrigerator, they’ll keep for about one week.
